In Ayurvedic medicine, kitchari is said to purify physical and mental toxins and improve memory!
Ingredients:
- 2 cups dried mung beans
- 3 teaspoons coriander seeds
- 1.5 teaspoons whole cumin seeds
- 8 cups water
- 1.5 cups long-grain brown rice
- 2 Tbsp olive oil
- 2 tsp ground turmeric
- Salt and pepper
Directions:
- Rinse the beans and soak them overnight. Rinse again in the morning.
- In a skillet, roast the coriander and cumin over high heat, stirring constantly for about 3 minutes.
- Bring water to a boil in a large covered pot and add the remaining ingredients. Simmer for about 2 hours.
- Season with salt and pepper to taste.
