In Ayurvedic medicine, kitchari is said to purify physical and mental toxins and improve memory!

 

Ingredients:

  • 2 cups dried mung beans
  • 3 teaspoons coriander seeds
  • 1.5 teaspoons whole cumin seeds
  • 8 cups water
  • 1.5 cups long-grain brown rice
  • 2 Tbsp olive oil
  • 2 tsp ground turmeric
  • Salt and pepper

Directions:

  1. Rinse the beans and soak them overnight. Rinse again in the morning.
  2. In a skillet, roast the coriander and cumin over high heat, stirring constantly for about 3 minutes.
  3. Bring water to a boil in a large covered pot and add the remaining ingredients. Simmer for about 2 hours.
  4. Season with salt and pepper to taste.
