This snack is rich in healthy oils and trace minerals. I find it deeply filling and energizing, even though it’s not a lot of food. The exact ingredients and proportions are super flexible, so experiment!
Ingredients:
- 1 package or 2 oz whole dulse (not powdered or flakes). I like the brand Maine Coast Sea Vegetables.
- ¼ cup cold-pressed, virgin coconut oil
- ¼ cup nutritional yeast
- ¼ cup pumpkin seeds
- ¼ cup unsweetened coconut flakes
Directions:
- If coconut oil is cold and firm, lightly heat the coconut oil in a pan until it softens. Do not heat it for very long or over high heat, as the heat destroys the delicious, coconut flavor. Use just enough heat to get it liquidy to coat the dulse.
- Mix the oil into the dulse until each piece of dulse is thoroughly coated in oil.
- Toss in the rest of the ingredients.
- Store in the fridge to give the oil time to slightly congeal.
- Eat with rapturous vigor.
- Store extras in a sealed container in a cool, dark place (like the fridge).
